Sauternes and the Art of Noble Rot
The wines of Sauternes are produced through one of the most extraordinary processes in winemaking: Botrytis cinerea, known as noble rot — a fungus that, under the right climatic conditions, concentrates the sugars, acids, and aromatic compounds within each grape berry to a remarkable degree. The microclimate unique to Sauternes makes this possible: morning mists rising from the Ciron river encourage the fungus to develop on the skins, while warm, dry afternoons slow its spread and allow the gradual desiccation of the fruit. The result is a wine of deep golden colour and extraordinary complexity — honeysuckle, dried apricot, blossom, and saffron — with the potential to evolve and improve in bottle for decades.
Château d'Yquem produces its wine predominantly from Sémillon, with Sauvignon Blanc and small quantities of Muscadelle and Sauvignon Gris. The estate's standards of selection are among the most exacting in Bordeaux: in the most demanding vintages, a single vine yields no more than one glass of wine.

Enjoying wine is a wonderful part of discovering France’s culture and heritage. We encourage guests to savor each tasting responsibly and at their own pace. Please remember that wine contains alcohol, and moderation helps you fully appreciate the flavors, keep a clear head throughout the tour, and make the most of your experience.
Please also note: In France, snacks are usually not provided during wine tastings to preserve the purity of the wine's flavor. We recommend having a good breakfast or lunch beforehand.
In regards to the protection of the environment, we will no longer provide plastic bottles of water during our tours. You are kindly advised to bring your own. Water and refills are available at the wineries, museums and attractions visited.
