Hidden beneath the restaurant, the famous “Cave of 100 Cheeses” welcomes you into an 18th-century vaulted underground cellar where French culinary heritage comes alive. This family-run institution, founded in 1987, offers a joyful and convivial Tour de France of Cheeses, guided by passionate hosts who share anecdotes, stories, and fun facts throughout the tasting. Seated around a large communal table, you’ll sample 9 AOP/AOC French cheeses from different regions, paired with 3 Bordeaux wines, dry white, red, and Sauternes, and accompanied by traditional sourdough bread from a local neighborhood bakery. This relaxed and interactive experience celebrates sharing, simplicity, laughter, and the pleasure of good food enjoyed together, in true French art de vivre.

Classic Bordeaux Wine and Cheese Pairings
Here are a few tips concerning wine & cheese pairing that we think might be helpful before you experience this once in Bordeaux. A good example of Bordeaux wine & cheese is the combination of sheep cheese with round & structured Bordeaux red wines. In this case, a perfect match could be found with a Castillon Côtes de Bordeaux that will break down the proteins of the cheese.
Another great option for sheep cheese would be to pair it with a sweet white wine. This unusual pairing always comes as a surprise to many, but in France a slightly sweet white from the Sauternes appellation that is unctuous and intense whose sweetness will bring out a contrast with the salty, tangy flavors of the cheese.
